We've been soaking our nuts and not just because it's so much fun to say. In fact we've been making almond milk* with the soaked nuts and soaking our seeds too.
It turns out soaking nuts (or seeds or grains) releases something called an acidic defensive enzyme inhibitor, making the nuts/seeds/grain easier to digest. And let's face it, doesn't your body have enough to do without having to work so hard to digest nuts?
Soaking your nuts is easy and super healthy. It encourages production of beneficial enzymes, which add vitamins and also make them taste more delicious.
* NUT MILK RECIPE: First, get yourself a nut milk bag. They're very cheap, we got ours on ebay for like 3 dollars. (Plus $40 shipping ha ha.) Or if you already have or would rather get a gold coffee filter you can totally use that.
Then soak 1 cup of raw almonds for at least six hours aka overnight. Chill 3 cups of water at the same time.
Drain and rinse the almonds. Eat a few soaked nuts for fun. Peel the skin. Notice how the veins on the skin seem to tell a nonlinear story, how the veins look like the lines on your palm. Life is good!
OK, now combine almonds with clean cold water in a blender with a pinch of salt (acts as a preservative). We like to add a splash of vanilla.
Then blend. It takes about a minute.
Pour it through the nut milk bag and milk all the liquid from the pulp. This part is super fun and feels really great on your hands.
You are left with the almond pulp. There is clearly some excellent use for this which we are still searching for. Let us know if you find it!
The milk doesn't keep that long, but it is so delicious we've only had it go bad once when we were away for two days. Pour it on cereal, coffee, use it in shakes, drink it straight.
The almond has so many health benefits, among them it's a fat fighter. And, according to some, this amazing nut assists in (positive) brain mutation.
